This morning we made a wonderful tasting and aesthetically pleasing bowl of oatmeal. Adding egg whites to the recipe gave the oatmeal a surprising texture and lightness. To enhance the flavor, cinnamon and vanilla were included as well.
Directions
- In a saucepan over medium heat, warm the water.
- Add the oatmeal and stir, adding cinnamon and vanilla to taste.
- When half done, add the egg whites and stir well until the desired texture is achieved. (Froth the egg whites first, or add them in their liquid state.) Egg whites give the cereal a texture that is pleasant to the palate.
- Sweeten to taste and top with favorite fruit, seeds or nuts.

- If more protein is desired, adding 2 egg whites contributes an additional 7 grams, for a total of about 12 grams of protein in one serving.
- Oats are high in fiber and contain phytonutrients, and may support the immune response to infection.
- For children, or if looking to increase caloric intake, substitute whole milk, half and half or heavy cream for the water.
- A soothing food if experiencing a sore mouth or throat.
- If experiencing difficulty swallowing, adjust the thickness or thinness to accommodate ease in swallowing.
