Stuffed Zucchini Flower Blossoms

Zucchini vines produce two types of zucchini flower. The male is more delicate and has a thin stem, while the female is generally larger and has a sweeter stem. Flowers are about 4 inches long. They range in color from pale yellow to orange.

Directions

  1. Cook the rice in the vegetable broth with the salt.
  2. Cool a bit and mix in the cumin and pine nuts.
  3. Mix the egg yolk into the mixture.
  4. Gently open each zucchini flower, remove the stamen and fill with the rice mixture; twist the petals closed.
  5. Steam for 2–3 minutes and serve.

  • Zucchini flowers are a rich source of vitamin C and a good source of potassium and folate.
