Pumpkin Bread

Pumpkins are a member of the gourd family. They have been grown in North America for over 5,000 years. Native Americans introduced pumpkins to the Pilgrims, for whom they were an important source of food due to their nutritive value as well as their ability to store well during the winter months.
Directions
- Preheat oven to 350°F (175°C).
- Beat eggs, oil and water together.
- In a separate bowl, mix all dry ingredients together.
- Add the liquid mixture to the dry ingredients and mix well.
- Add pumpkin purée (and nuts, if using) and mix well.
- Pour into greased loaf pans.
- Bake mini loaves for 30–35 minutes.
- Bake standard loaf pans for 45–50 minutes.

- Two carotenoids, alpha-carotene and beta-carotene, are potent phytonutrients richly present in pumpkin. Carotenoids from whole foods like pumpkin are thought to play a role in protecting against many diseases.
- Pumpkin is a very rich source of vitamin A and the phytonutrient beta-carotene. It is also an excellent source of vitamin C and a good source of B complex vitamins, iron and zinc.
