Mango Walnut Smoothie

Walnuts are a staple in my pantry. Cooking and baking with walnuts occurs on most days: I use them as an ingredient in nutty savory and sweet nut mixes, cakes, breads, muffins, pesto, sweet pie and savory quiche crusts, salads, sauces, cookies, brownies, granola, pancakes, and the list goes on! I recently found a great source for organic walnuts for all my creations, and have gotten excited about creating new walnut recipes. Today, I decided to create a new smoothie recipe using walnuts and a ripe mango I had on hand.

Directions

  1. Place all the ingredients in a blender, adding the liquid ingredients first.
  2. Blend until smooth.
  3. Pour into glasses and sprinkle with walnuts.
  4. For a thinner consistency, add extra juice.

  • Walnuts in their raw form contain high levels of antioxidants as well as ALA, the plant-based omega-3 essential fatty acid.
  • Walnuts are also a good source of protein, fiber and the mineral manganese.
  • Walnuts keep their freshness in an airtight container stored in the refrigerator or freezer.
