Lobsters have existed as a species for almost 300 million years, since the age of the dinosaurs. When the first European settlers reached North America, lobsters were plentiful, washing up along the shore, making them a precious source of sustenance during hard times.
Directions
- Boil the lobster with a large handful of dill. Cool.
- Remove the meat from the shells and cut into pieces.
- Mix together the mayonnaise, lemon juice, lemon zest, tarragon, scallions, parsley, salt and pepper.
- Add the lobster pieces and combine with the mayonnaise mixture.
- Toast the rolls and fill with the lobster salad.
- Optional: serve alongside steamed corn, asparagus, fennel salad, coleslaw and potato salad.
