There are numerous health benefits in eating fresh sushi-grade fish. It is a great source of protein, calcium, vitamin D and omega-3 fatty acids.
Directions
- Mix the mustard, lime juice, lime zest, salt and pepper together in a bowl.
- Add the tiny pieces of fish to the mixture, mixing gently.
- Add the remaining ingredients and combine, mixing gently.
- Adjust the seasoning to taste.
- Pack into a round form (ring mold) and unmold onto a serving dish.
- Garnish with toasts, purple potato crisps and an assortment of lettuces topped with toasted pumpkin and sunflower seeds.

- This dish is raw fish. Buy only sushi-grade fish from a trusted fishmonger, keep it very cold, and serve it the day you make it. Raw fish is best avoided by anyone with a weakened immune system, including during chemotherapy.
