Guacamole

Guacamole dates back to the 1500s. The Aztecs called it "ahuaca-mulli," meaning avocado mixture. They believed it to be a natural aphrodisiac. With more protein and monounsaturated fats than other fruits, it was vital to their diet. Avocados are a very good source of fiber, vitamin K, vitamin C and folate.

Directions

  1. Spoon the avocado flesh out of the skins into a large bowl. Set the skins aside to use for serving.
  2. Coarsely chop the avocado to create small chunks.
  3. Gently mix in the cilantro, onion, lime juice and tomato.
  4. Add salt, pepper, hot sauce and red pepper flakes to taste.
  5. Spoon into the avocado skins and serve with crudités.

  • When tomatoes are eaten with fats like olive oil or avocado, our body's absorption of the carotenoid lycopene found in tomatoes is significantly increased.
  • Avocado is an excellent source of fiber and a good source of vitamin C and vitamin K.
