Fresh Spring Vegetable Rolls

On a warm summer evening, these chilled, healthy spring vegetable rolls are particularly inviting to all the senses. I served these last night for a dinner party, and they received rave reviews!
Directions
- Cabbage Slaw: Sauté the red onion in the sesame oil for 2–3 minutes. Add the shredded red cabbage, carrot and napa cabbage and sauté another 2–3 minutes. Add the rice vinegar, tamari, ginger and maple syrup and sauté another 2–3 minutes, until the liquid is almost completely reduced. Stir in the chopped cilantro. Cool a bit before filling the rolls.
- Avocado-Edamame Spread: Blend all the spread ingredients together until smooth.
- Rolls: Soften the rice paper rounds by soaking them one at a time in a shallow bowl of warm water.
- Place a softened rice paper round on a clean work surface.
- Spread 1 teaspoon of the avocado-edamame mixture along the top third of the round, leaving 2 inches between the spread and the edge. Add 2–3 tablespoons cabbage slaw on top. Optional: lay a mint leaf on top of the cabbage.
- Fold the right and left sides toward the center over the filling.
- Fold the bottom edge up over the filling and roll tightly away from you.
- Cut each roll in half. Chill and serve with one of the dipping sauces.
- Spicy Lime Dipping Sauce: Dissolve the sugar in the water. Add the garlic, lime juice, orange juice, chilies, salt and cilantro and mix together. Let the flavors infuse for 1 hour before serving.
- Thai Chili Dipping Sauce: Mix all the ingredients together.
- Peanut Dipping Sauce: Blend all the ingredients together until smooth.
