
Flan, or crème caramel, is a type of custard in which sugar is caramelized, poured into a baking dish and allowed to harden, followed by pouring in a custard base and baking in a water bath.
Directions
- Preheat oven to 350°F (175°C).
- Caramelize 1/2 cup sugar and pour into the baking dish.
- Beat the 6 eggs with 1/3 cup sugar.
- Heat the milk with the cinnamon stick to just below the boiling point. Remove the cinnamon stick.
- Add the milk and vanilla to the egg mixture, mixing at low speed.
- Pour the mixture into the baking dish.
- Place the baking dish in a water bath (1–2 inches of water).
- Bake for one hour.
- Cut into pieces, spooning the caramel sauce over each serving.
