Chilled Cucumber Soup

The cucumber plant is native to many regions in the world, grown in tropical as well as temperate climates. The first cucumbers were thought to originate in the Middle East and India. In the 1500s the European colonists brought cucumbers to North America, and today California and Florida provide the United States with fresh cucumbers for the majority of the year.

Directions

  1. Purée the basil, scallions, mint and water together.
  2. Add the cucumber and pulse.
  3. Pulse until the desired consistency is attained. For a very smooth soup, blend until smooth. If a chunky soup is desired, pulse 5–6 times to retain bits of cucumber.
  4. Blend in the lemon juice and sour cream, and season with salt and pepper.
  5. Chill well and serve garnished with thinly sliced cucumber.
