Chef Salad

This is a variation on the theme of the old stand-by chef salad, tweaked to make it a bit healthier, sans bacon and blue cheese.

Directions

  1. In a large salad bowl, add all the greens.
  2. Top with cucumbers, avocado, tomatoes, eggs, ham, turkey and cheese.
  3. Mustard Vinaigrette Dressing: Mix the Dijon mustard with the red wine vinegar. With a fork, mix continuously while slowly drizzling in the olive oil. Add salt and pepper to taste.
  4. Add the mustard vinaigrette, toss and serve, or dress with one of your favorites.

M.D. Notes

  • Avocado adds fiber and healthy monounsaturated fat, and the eggs, turkey, ham and cheese make this a full meal in a bowl.
