Banana Applesauce Muffins

Banana bread and applesauce were staples in my grandmother's kitchen. These are among the first recipes I remember making with my grandmother. To this day applesauce and banana bread are staples in my kitchen.

I thought adding applesauce to the banana loaf recipe would add great flavor along with added moistness, and so the "Banana Applesauce Muffin" was born.

All children seem to love these muffins.

Directions

  1. Preheat oven to 325°F (165°C).
  2. Grease a mini muffin pan.
  3. Beat together banana, oil, buttermilk and eggs.
  4. Mix together the dry ingredients (sugar, flours, baking soda, salt). Add to the banana mixture, then add the applesauce.
  5. If using walnuts or chocolate chips, add and fold in well.
  6. Bake about 15–20 minutes, until a tester comes out clean.

M.D. Notes

  • Bananas are a good snack on the run; great in smoothies, in pancakes, on top of French toast or alongside my French Toast Bread Pudding.
  • Bananas are a good source of vitamins C and B6, and of the minerals potassium and manganese. They are a good source of fiber (about 3 grams in one banana).
  • Apples contain a wide variety of phytonutrients, many of which have been found to have strong antioxidant activity, an example being the flavonoids (quercetin and naringin).
  • Apples have quite a bit of soluble fiber and are a good source of the antioxidant vitamin C.
  • Unsweetened applesauce is nutritious and has high concentrations of phytonutrients.
  • This is a nice muffin to eat as a snack on days when undergoing chemotherapy. It is easy on the mouth and stomach (without the nuts and chocolate).
  • Bananas are a good food to eat if one is experiencing symptoms of diarrhea.
  • Applesauce is easy to digest and may also help with symptoms of diarrhea.
