Hamburger with Bacon, Cheddar Cheese, Herb Red Onions and Chipotle Mayonnaise

Today was a beautiful day: a day with my son home from college for 24 hours, and the first day of spring! I prepared the best grass-fed hamburger, made with love and the most flavorful toppings, for our tête-à-tête before he took off again. My foolproof recipe for crispy French fries accompanied the burger, along with a cold beer.

Directions

  1. Chipotle Mayonnaise: Mix together the mayonnaise, chipotle sauce, chives, Dijon mustard, salt and pepper.
  2. Red Onion Sauce: Combine the red wine and red wine vinegar in a saucepan over medium heat and bring to a boil. Add the rosemary, thyme and red onion rings, then turn off the heat. Transfer to a bowl and refrigerate to cool. Can be prepared one day in advance.
  3. Burgers: Cook the bacon until crisp, removing all fatty bits.
  4. Season the meat and form into patties.
  5. Grill the hamburgers to the desired doneness.
  6. Top with cheddar cheese and bacon and place onto toasted brioche rolls.
  7. Garnish with lettuce, tomato, chipotle mayonnaise and red onion sauce.
