Hamburger with Bacon, Cheddar Cheese, Herb Red Onions and Chipotle Mayonnaise

Today was a beautiful day: a day with my son home from college for 24 hours, and the first day of spring! I prepared the best grass-fed hamburger, made with love and the most flavorful toppings, for our tête-à-tête before he took off again. My foolproof recipe for crispy French fries accompanied the burger, along with a cold beer.
Directions
- Chipotle Mayonnaise: Mix together the mayonnaise, chipotle sauce, chives, Dijon mustard, salt and pepper.
- Red Onion Sauce: Combine the red wine and red wine vinegar in a saucepan over medium heat and bring to a boil. Add the rosemary, thyme and red onion rings, then turn off the heat. Transfer to a bowl and refrigerate to cool. Can be prepared one day in advance.
- Burgers: Cook the bacon until crisp, removing all fatty bits.
- Season the meat and form into patties.
- Grill the hamburgers to the desired doneness.
- Top with cheddar cheese and bacon and place onto toasted brioche rolls.
- Garnish with lettuce, tomato, chipotle mayonnaise and red onion sauce.
