Green Gazpacho

There are a variety of tomatoes that are green when ripe, including the Green Zebra, Green Pineapple, Green Grape, Green Giant and Lime Green Salad tomato. These are different from the green, unripened red tomato.

This is another wonderful cold soup to enjoy on a warm summer day.

Directions

  1. Cut up all the vegetables and place in a large bowl with the baguette pieces.
  2. Add the olive oil, salt and pepper. Toss well and cover.
  3. Refrigerate for 1–2 hours (or prepare a day in advance and marinate overnight).
  4. Purée in a strong blender until the desired consistency. Adjust the seasoning to taste.
  5. Serve cold with your favorite assorted garnishes.

  • Green tomatoes are an excellent source of vitamin C and a good source of vitamin K and fiber.
  • Tomatoes are botanically a fruit and are considered a vegetable for culinary purposes.
