Butterless Cranberry Scones

After years of preparing many varieties of scones, this recipe has evolved, which we coined the "perfect scone" without butter.

Directions

  1. Preheat oven to 425°F (220°C).
  2. By hand, combine flour, sugar, baking powder and salt.
  3. Add cranberries (or another chosen option).
  4. Beat the eggs.
  5. Stir in the cream and eggs until a dough is formed, without overworking the dough.
  6. Roll out the dough 1 inch thick and cut into triangles or circles.
  7. Place on parchment paper or an ungreased baking sheet.
  8. Brush the tops with milk and sprinkle with demerara sugar.
  9. Bake in the upper third of the oven until the tops are light golden and the bottoms golden brown, about 10–15 minutes.
